Ingredients used

  • 3 eggs
  • 1/2 cup coconut milk
  • 1/2 cup milk
  • 1/4 cup sugar
  • 1/2 tsp vanilla extract
  • 1 pinch of salt
  • 3 cups shradded coconut
  • 1 cup condensed milk
  • 1 cup diced mango
  • 1 cup diced pineapple
  • 2 passion fruit
  • 1 cup whipped heavy cream
  • 1tbsp butter

Preparation

  • Step 1

    Spread the shredded coconut on a baking tray and place in the oven for 10 minutes until golden brown.

  • Step 2

    In a bowl, whisk the eggs with the coconut milk, milk, sugar, vanilla extract and salt.

  • Step 3

    Soak 4 slices of the flaky pure butter loaf in the mixture.

  • Step 4

    Melt the butter in a frying pan and roast the slices until nicely browned on both sides.

  • Step 5

    Using a brush, spread condensed milk over the slices and coat in shredded coconut.

  • Step 6

    Place the slice of French toast on a plate, add the tropical fruit, a quenelle of whipped cream on top and drizzle some condensed milk. Enjoy!
