In a medium bowl, whisk together the mayonnaise, bacon, buttermilk, chive, onion powder, garlic, mustard powder and pepper. Season with lemon juice and salt to taste. Refrigerate until ready to use.

In a large bowl, season the tomatoes to taste with salt and pepper. Add the lettuce and the red wine vinegar (to taste). Adjust seasoning as needed.

Cook the hot dogs on the grill or grillpan.

To assemble, spread a generous amount of the mayonnaise on the buns, then place a warm hot dog sausage. Top with sliced tomato and lettuce leaves
