Remove the almondines from the freezer, place on a baking tray with baking paper and leave to defrost at room temperature for 20min.

In a bowl, mix the almond paste with the passion fruit purée.
Step 3
Place the almondines in the moulds. Using a piping bag, pipe the passion fruit almond paste over the almondines and bake at 350°F (180°C) for 12-15min.
Step 4
Remove from the mould and allow to cool. Then place on a plate.
Step 5
Add vanilla pastry cream on top of the baked almondines, and arrange the fresh fruits.
